Alice's Bread Recipes

1/2 cup milk
3 tablespoons of sugar
2 teaspoon salt
3 Tablespoons butter
2 packages or 1 TBS active dry yeast
1 1/2 cups of Warm water
5-6 cups of flour

Heat the milk, sugar, salt and butter in a small saucepan over low heat until the butter melts and the sugar dissolves. cool to luke warm.
Dissolve yeast in warm water in mixer bowl. Add milk mixture and 4 1/2 cups of flour. Mix with dough hook on speed 2 for 1 minute.
Add 1/2 cup of flour at a time and mix for 2 minutes after each addition. When the dough is only slightly sticky, clings to the hook, and doesn't stick to the sides of the bowl , then enough flour has been added. ( you want to add the minimum flour needed to get this consistency so it is less dry) Knead on speed 2 for 5 minutes. Place dough in a greased bowl, then turn it over to grease the top. Cover with a cloth and let it rise in a warm place for 1 hour. ( turn the oven on then off so it is warm and stick it in there) Shape into 24 rolls or 2 loaves let them rise for 45 minutes the bake at 400 for about 10 minutes for the rolls. for loaves 350 for 30 minutes. they are done when they are golden brown.

Mom's Flour Tortillas

71/2- 8 cups of flour
1 tbsp- baking powder
1/2 cup of shortening
2 TBS salt
mix above ingredients
Add:
2 cups Hot water
Add 1/2 cup water as needed
knead until you can make a ball
butter hands and speard over dough and knead a little bit more
Break of dough into fist size balls sprinkle w/ flour to avoid sticking together
flatten and roll out tortillas
cook on griddle or greased pan for about 30 secs and flip over on the other side

makes about 29-30 tortillas
