Chilli cheese pie
When I don't feel like cooking I make this. All you do is cook some corn bread halfway. Take it out pour a can of chilli on top of it cover it with cheese and let if cook the rest of the way. I like to cook the cornbread almost all the way. but you just have to experiment.
Meatballs and Rice
One of my hubby's favorites are meatballs and rice and they are really easy
In a crockpot put frozen meatballs, heinz chili sauce, and some grape jelly. I also like to put crushed red peppers.
Then just make some rice.

Red Rice
My mom makes this all the time and my sister wrote the recipe down. This was also served at my wedding Reception.
Red Mexican Rice
1/4 cup oil
2 cups extra long grain rice
4 cups of water
1 tbsp of chicken bouillon
8 oz. tomato sauce
1 Jalapeno
1/2 small onion sliced in rings
can of corn, frozen peas (optional)
In a 3 qt pot, brown rice over medium heat with oil until it turns golden brown. Be sure to stir rice often so it doesn't burn. Add the water and bouillon and let it come to a boil. Stir in the tomato sauce, onion ring, corn, and Jalapeno, reduce heat to a simmer and put the lid on the pot. Let it cook until all the water has been absorbed and the rice is soft (usually 15 minutes). Uncover rice and fluff the rice with a spoon so it doesn't contine cooking

Chicken Enchiladas
This recipe was also a favorite among my friends at BYUI. I even had my mom make them for my wedding reception.
Chicken Enchiladas
Ingredients:
`2 lbs of chicken ( cooked and chopped or shredded)
1 lb of Cheddar Cheese (shredded)
2 cans of cream of mushroom ( 10 1/2 ounces)
1 1/2 cup of milk
1 can of green chiles ( I like to use the small can)
1 chopped onion
1 can of olives (chopped)
18 corn tortillas
Sauce: combine soup, milk, green chile, onion, and olives in a pitcher. Mix well. Add salt and pepper to your taste.
Stir sauce during the stacking process often since the onions tend to fall to the bottom. This dish is made just like lasagna. In a 9 x 13 casserole dish pour a thin layer of the sauce then start stacking the layers of tortilla/sauce/meat/cheese then back to tortilla. Make sure you pour the sauce directly over the tortilla, otherwise your tortillas will end up stiff. ( My mom likes to softened the tortilla first in oil then to the stacking process)
About 6 tortillas will line a 9x 13 and you should end up with tortillas as your top layer. Pour remaining cheese and sauce on the top layer. Bake immediately (it will turn soggy If not baked soon after preparing) at 400 degrees for about 40 minutes or until bubbling and cheese is melted. Let it sit for about 15-20 minutes before serving.

Michelle's Potato Salad
As I was growing up I would always asked my grandma if she would make potato salad for me everytime we went to Arizona to visit. Well the visits became fewer and fewer because we lived far away. so I asked my mom but she couldn't make it. She bought and I dislike the bought stuff so while I was in college I perfected the recipe with a little help from Grandma, My Mom, and My Sister.
Potato Salad
Eggs (boiled and peeled)
Potatoes (boiled, peeled and cut in to cubes) I also like the use the redskin or yukon gold potatoes.
Celery (diced)
Mayonaise
Mustard
Dill Relish
Salt and Pepper
Paprika, dijon mustard, italian dress, cayenne pepper, sugar vinegar mixture are all (optional)
First I make the mixture of mayo, mustard, salt, pepper, dill relish, and celery.
Then I grate the eggs with a cheese grater and add to the mixture.
Stir it all together.
Then add the cubed potatoes add salt and pepper to them and mix it all together.
Add there you have it. You may have to taste it and add whatever else you want

Pork Pot Roast
While I was attending BYUI. I made this for my roomates and friend ocassionally ( usually on Sundays). They loved it so they told me.

Pork roast
Honey
Soy sauce
Potatoes (Whole)
Carrots
Salt and Pepper
1 cup of water
Put the defrosted roast in a crockpot.
Adding salt and peper to both sides.
Add honey to both sides. ( Make sure it is all over the roast)
Then add soy sauce to both side
Next add 1 cup of water
Then add the potatoes and carrots.
Put it on high 4 to 6 hrs.
Something New
I decided to make this a recipe blog.
It will contain experiments that I have done over the years and recipes I have found.
